Streptococcus thermophilus is a Gram-positive spherical to ovoid nonmotile coccus, 0.7–0.9 μm in diameter, occurring in pairs and chains, some of which can be very long. The bacterium has an optimum growth temperature of 40–45 °C, a minimum of 20–25 °C, and a maximum near 47–50 °C. It is one of the earliest probiotic strains to colonise the human gut and has even been found in infant microflora and breastmilk.

STABILITY

Streptococcus thermophilus HH-ST08 powder were sealed in aluminum foil bag, maintained at -18℃ for 24 months for long-term stability test. The microbial enumeration of Streptococcus thermophilus HH-ST08 should be performed no more frequently than at the initial, 1, 2, 3, 6, 9, 12, 15, 18, 21, 24 month time points. According to Fig 1, the potency of Streptococcus thermophilus HH-ST08 powder was 2.57×1011 CFU/g. After a storage period of 24 months, the potency of the powder was 1.41×1011CFU/g. It means that this strain can remain stable for long time if stored at low temperature.

APPLICATIONS

Streptococcus thermophilus has been extensively used in dairy products due to its strong EPS producing ability. It has been reported that the EPS secreted by S. thermophilus was able to enhance the texture, improve the viscosity, and modify the mouthfeel of yogurts
